I know I wrote about how much I love smoothies a few months back. I still make a smoothie every day for breakfast or lunch! My Mom, who I’ve also talked about before, went on a diet change and lost 20 lbs! Now, she looks way better then me and swears she owes it all to the NutriBullet!



She became obsessed with this thing; making smoothies for my Dad and Brother and even offered smoothies to our UPS man. I wouldn’t doubt it if she made a smoothie for my cat too! She would call me every morning asking, “Did you make your bullet?” “What kind of stuff did you put in your bullet?” Bullet! Bullet! Bullet! I thought she was getting a little ridiculous. I mean, my smoothies were not life altering, they always came out too thick or too watery. It was a biotch to clean and I was always making too little or too much. …but that’s because I used a Ninja. When I went home to visit my family for three months, I started using the bullet and my life was changed! The best part was the smoothies could be made on the go. I’m not too much of a morning person so I tend to skip breakfast in a fit of rush. So when I found out the that the cup you blend with is the cup you drink out of, I was sold. It’s powerful, easy to clean, and always creates a good consistency.

I was sad to part with the NutriBullet and to go back to my Ninja, but for once I’ll be waiting for those Bed Bath and Beyond coupons to come in the mail so I can obsess over my own bullets!




Trying to get a little motivation today!

After reading my post about the Cado Eggs, I got to thinking…. I know that I don’t enjoy eggs, so why did I make something focused around egg?! My cousin flew back from vacation and has been working a ton! Coincidentally, I have off this week so I get to play homemaker. After cleaning the house and washing the cars, I sat down and browsed through recipes that I think I would like if they didn’t have eggs in them. One recipe significantly jumped out… Quiche. Pie crust, cheese, cheese, vegetables, cheese…it sounds amazing, as long as it doesn’t have eggs. So I found a tofu substitute recipe from allrecipes.com. The original was a little bland so I found myself adding a dash of red pepper flakes, a little more pepper and a lot more cheese. With that being said, with all the cheese I added, I pretty much turned this light recipe into a fatty lover’s paradise. Here is the original:

  • 1 package of tofu
  • 1 small box of frozen spinach
  • 1 clove of garlic Eggless Quiche
  • 2/3 cup of  shredded cheddar (I did 1 cup)
  • 1/3 cup of shredded swiss
  • ** I added 1/3 cup of shredded parmesan**
  • 1/4 white onion, chopped
  • 1 frozen pie crust
  • 1/4 cup of milk, 1%

First I preheated the oven to 350, but if you’re using all that extra cheese I’d make it 375. I then blended the tofu and milk together until a thick, creamy consistency was produced. From there I added the rest of the ingredients into the tofu bowl and folded the ingredients together, adding salt and pepper as I went. I baked it for 35 mins and let it sit for 5, then served!


Arugula, Mushroom and Tomato Salad

I was pleasantly suprised with how well the eggless quiche turned out! I also made a mushroom, tomato and arugula salad. It was all Yummie, but the quiche was a little heavier than expected. I’ll take full blame for that though, since I went nuts with the cheese grader.

I can’t tell you how many times I come across this funky looking breakfast as I scroll through my insta. I didn’t have to go to school this morning (thank God) so I lounged around… did a little facebooking, craigslisting, pinteresting, and instagramming. As I said Imagebefore I see eggs in avocados all the time on my insta and I’ll be the first one to admit… it looks amazing!! Right now there are like five things (total) in my fridge. Lucky enough for me, those five things made a cado egg!


Here’s my take on the recipe:

  • Preheat the oven to 425
  • Cut an avocado in half and take the pit out
  • Depending on how much egg you want, cut out a little bit of avocado as wellImage
  • Pour a cracked egg, yolk first, into the avocado. For me, I put the remaining whites in the other half but you can also use two egg yolks
  • Sprinkle the top of the cado with italian bread crumbs
  • Coarsely chop chives and cilantro and set those aside to add later
  • Thinly slice a jalapeno, if you like spicy, and lay the tiny slices across the avo
  • Put the avo’s in personal tin foil bowls and let them sit in the oven for 25 minutes
  • After taking them out, sprinkle the chives, cilantro and freshly graded parmesan over the top

I also made a stewed mushroom tomato hot salad:

  • 6 crimini mushrooms coarsely chopped
  • 8 baby tomatoes, halved
  • minced garlic
  • minced slice of jalapeno
  • splash of olive oil
  • heavy pour of red wine vinegar
  • 1/8th cup of vegetable stock


To be quite honest, the mushroom salad was 50x better than the cado eggs. Maybe I didn’t put enough flavor (I thought I over flavored), but the cado tasted like one big bland cado that oozed yellow. It must be because I don’t enjoy eggs. So final verdict…. these look cute and pinteresty, but eggs are still not my style


fitness on the east side

I have emerged from my summer cave!!! Wow, I CANNOT believe I gave up blogging for three months! I was finally getting into the swing of things… taking pics of everything I did, journaling the last breakfast I ate, and working on my nonexistent creative writing skills. And then BOOM! All of a sudden, I was signing a contract for grad school, moving out of my apartment, renting a storage unit and heading back to the good ol’ Dirty Jerz.

Needless to say I went into fitness and health hibernation. First, before I tell this story, I need to go on a random rant. I am proud to say that I live at the Jersey Shore. The “shore” or BEACH as us common folk call it, is nothing like the glamorific, I mean horrific, tale the group of nauseating guidos tell on their quest to make jersey trashy reality tv shows. Well, at least where I live it’s not. I live on a small island that has one road north and the other south. My beach cruiser is my prime set of wheels and my drama starts and ends at what beach I should go to. So thats my answer to the annoying whiney question, “Is New Jersey really filled with Snookis and JWows?”

Anyway… I had the best summer EVER! My days blurred together with brunching, happy hours, dinners, late night house parties and drinking on our dingy. So to sum that up booze, booze, drunk food, hangover food, booze and booze. Insert salad once or twice. You wouldn’t be able to find a muscle, or any of the  muscle’s I worked so hard on this past winter, on my body even if you tried. My body looks like one big potato sack. The worst part is I didn’t, technically, gain any weight! I just replaced all my hard earned muscle with the dreaded F A T not to mention the cellulite on my once beautiful fanny.

So now I am back in Hawaii and starting nursing school…graduate nursing school. I haven’t cared too much about checking my blog due to the fact that my audience consisted of myself and my grandma, Gigi (thanks for supporting Gigi!!!) I logged on to look through my newsfeed and saw that I had 9 comments pending!!! The love, any love, I got from the random peeps  who enjoyed reading my stuff made me beyond ecstatic!!! I can’t believe people like my writing and lack of spelling! So… I am back on my blog, but this time I will be writing about my trials, tribulations, and hopefully successes of nursing school as well documenting my ability to get back on the health wagon.

So I guess what I am asking is, please, PLEASE keep commenting!! I need motivation!! Right now I am trying a slew of new “vitamins” and supplements for weight loss… even a detox tea. And I PROMISE I will write about this and that with a little entertainment!


Long Beach Island Can Be Paradise Too!

…is the key word. I can’t express how easy it has been not to cheat. I am so fancyveggieexcited to embark on my new meals that I’ve prepared. The only problem is the mass amounts of bathroom breaks I’m been taking on day 2. Last night I had to work an 8 hour shift, which isn’t that bad, but when you’re a waitress there is no time for bathroom breaks. I told my manager in advance that I was doing the Sambazon cleanse thus, she bursted out laughing every time I sprinted out the restaurant and down to the bathroom. Yesterday, for lack of preparation time, I made the veggie burger again. I have to say, even though it’s the same patty I usually eat 2x a week, dressing it up with a kale bun and tomato, onion, sprout and mushroom toppings makes it look so much nicer! Also, because I am only having each juice one time per day I am not getting sick of the recipes (cough, cough master cleanse).

Here is one of my favorites from Day 2: Roasted Beat and Blood Orange Salad

  1. salad4:141 cup of spinach
  2. roasted beats – roast them in the oven @ 350 for 30 mins
  3. roasted onions
  4. roasted mushrooms – everything roasted goes in the same pan then covered with foil
  5. 2 tangerines
  6. sprouts
  7. sesame seeds
  8. caraway seeds
  9. 1 tblspn of goat cheese

So I had the day off on Wednesday and was doing my usual “spend all my hard earned money”Image at Costco when I came across this Sambazon 3 Day Cleanse juice package. It seemed fairly inexpensive and seemed like a good way to keep me on good behavior over the weekend. I cant say enough about this cleanse. It’s not one of those fad meal plans where you only drink lemon water for ten days. Sidenote: I tried that Master Cleanse three years ago and on the third day started vomiting every time I had to down that god ugly juice. Im only on day two of the Sambazon, but here’s why I like it:

  1. It’s Not Just Juice. The plan is centered around three cups of juice throughout the day, but the juice is also taken with a small meal. The key is to change the standard eating habit of 3 square meals per day to five or six small meals per day. On day one I didn’t want to eat after the third meal I was already full! I like having the small meals too because it forces you to prepare in advance. That way there is no time for cheating!
  2. The Juices Taste Good! I’ll have to admit, I was a little hesitant to buy the cleanse when I saw the cherry, lemon and cayenne juice (its Master Cleanse hell all over again)! But, they cherry makes it a little sweeter and you can barely taste the cayenne. The cashew and cocoa one is super good, it’s like having a mid-day milkshake!
  3. It’s Realistic. Suddenly switching from a diet that focuses on three square meals that probably includes carbs and salt to an all-juice diet is not going to happen. Unless you have the willpower of a nun taking an oath of silence, I am sorry but you will cheat or kill the people around you who are eating. This cleanse isn’t promising that you will lose ten pounds in a week – its just trying to help you change your eating habits a little. They also encourage you to jump outside the box a little bit. For example, I dont have blood oranges for the salad I am currently making, but will use a tangerine. 

I am not going to post about every meal I have made, so I’ll just post my favorite of the day, one’s that I will reuse after the cleanse. So here is the favorite of Day 1:

Quinoa Bowl: 1/4 cup of uncooked quinoa, 1/2 a cup of fresh mixed berries and a tablespoon of coconut oil. The coconut oil makes it!


when in the broiler. After a long day of errands, I finally came home and prepared some kale chips. But, I had a million more things to do and forgot to take the chips out. 15 minutes later black smoke was trickling into my bedroom and my oven was on fire! Moral of the story: I’m sad I let all that Kale go to waste. Real moral: They only need to be in there for 3 mins tops!Image

I know I know… This is supposed to be my journey toward a healthier me. But in bdayall reality, I am 24 and don’t always want to be 100 percent straight and narrow. For example, last week was my birthday and I had a great few days of celebrating. I mean, who wouldn’t want to celebrate their birthday on the beach, drinking champagne and getting tan with their girlfriends?


But the most time consuming part of the last two weeks has been the new PUPPYYYY!!!! Hazel moved in downstairs and I have proclaimed myself her mother/spoiler. Pretty much I take care of her when I want to and get to go crazy at Petsmart. She is so much fun!





So after a week of celebrations, I’m back. I’m toning down the drinking and focusing on my workouts. Mostly because I leave in a month to move back to the mainland 😦 I am extremely heart broken but its for the best.

Family or Paradise? A question I have been having trouble with the past few months. Today I am taking time off from my usual workout and recipe rant to reflect on a wonderful week with my mother. As I said in the last few posts, my mom came to visit this past week. She leaves today so we will have one last hurrah. But, her stay has really made me consider, is living in Hawaii worth it when you don’t have the ones you truly love to enjoy it with? Sure, I have made great friends, an ok job, and made the steps necessary to enroll in grad school, but for the most part, I am lonely. I miss home!

Spending this week with my mom has made me realize, I can’t set make a place my home without the essentials… people who make it a home.

What I love about my mother is the way she can turn any negative situation into a positive one. My boss didn’t give me a single day off, it rained the entire time, and we both got sick. It rained five out of the eight days she was here. Now, most people would be outraged by the fact that they spent 900 dollars to fly across the world and sit in their daughter’s apartment, waiting for the rain to pass. But my mom just kept reassuring me that she was happy to be here. Also, we both caught bronchitis! The bronchitis was a blessing in disguise though. I had a long list of activities to do and in reality, relaxing was what we both needed. So we checked into a hotel, put on our robes, and read for three days. Aside from the fact that I had a major blonde moment and checked in a day late, causing us to get kicked out mid-nap, we had a fabulous time! It was just what the doctor ordered.

I set out to Hawaii over a year and a half ago to find paradise. I found what I was looking for: great hikes, the sun shining 7 days/week, and warm water, but is this really paradise without your loved ones to share it with?bathrobe girls momni momtea tea waiks
